Ketchup

It's true. Homemade ketchup is so tasty you could eat it with a spoon. I did a little research and it turns out that many of the best eating tomatoes are not good for sauces because they have a very high water to pulp ratio and will cook down to almost nothing. You gotta use sauce tomatoes—roma, san marzano or the like. For seasoning I used onion, garlic, salt, pepper, a little brown sugar, apple cider vinegar, cinnamon, clove, allspice, and celery seed. I did not add much sugar, but it came out very sweet. Now I've gotta get my hands on some more tomatoes!
